For thousands of years, the olive, the emblematic fruit of Mediterranean regions, has been at the heart of rich culinary and cultural traditions. The transformation of olives into oil, a veritable “liquid gold”, is a fascinating process that begins with a key stage: harvesting. Our olive grove boasts a wide variety of olive trees, giving our extra-virgin oil exceptional complexity and fruitiness. We take our olives to a mill located just 2 km from the estate, and mechanically cold-press them.
